<p sizcache="43" sizset="120">4 medium russet potatoes (about 1 3/4 pounds), unpeeled<br />3 tbsp olive oil<br />1 tsp kosher salt<br />1/4 cup chopped fresh parsley<br />4&nbsp;garlic cloves, minced<br />1/4 to 1/2 cup finely grated Parmesan cheese<br />Salt to taste</p>
<p sizcache="43" sizset="120">Preheat oven to 425 degrees F.</p>
<p sizcache="43" sizset="120">Cut potatoes lengthwise into slices that are 1/3-inch thick and then cut each slice into 1/3-inch thick strips. Dry the potatoes between paper towels or kitchen towels. In a large bowl, combine the potatoes, olive oil, and 1 teaspoon kosher salt. Divide the potatoes between 2 baking sheets lined with parchment paper, spread into a single layer.</p>
<p sizcache="43" sizset="120">Bake until the potatoes are golden brown, about 40 minutes, turning the potatoes every 10 minutes and rotating the racks halfway through baking.</p>

Flavor with vanilla and liquor. Let set for an hour. Melt the butter in the crepe pan and add to batter. Pour about 2oz of batter on the warm pan. Spread evenly all over the pan and cook about a minute on each side. Reserve and repeat operation for the rest of the batter. You should get 8 crepes.<br /><br /><strong>ORANGE COMPOTE</strong><br />Blend the sugar with the pectin. Grind the zest of an orange, segment the 2 oranges and place in a saucepan with the juice of the orange and the vanilla. Bring to simmer, add the sugar blend and let simmer for a minute. Reserve in a cool place until needed. <br /><br /><strong>SUZETTE BUTTER</strong><br />Mix all the liquors together and save 1 oz for flambee. With a spatula mix the soft butter in a mixing bowl with the sugars and the rind until well combined add the liquors carefully until all are absorbed. Reserve until needed. Can be refrigerated or frozen.<br /><br /><strong>SERVING THE MASTERPIECE</strong><br />In a saucepan, place the butter until well melted, add the crepes, fold them in quarters with some compote inside. Add the saved oz of liquor and flambee by lifting the pan close to the burner so the sauce catches fire. Add the orange juice to make a sauce. We go to see our relatives &mdash; my family in Sorrento, Italy, and Sabina&rsquo;s in Cleveland, San Francisco and Germany.</p>

Give me a tent in the forest, a fishing pole and river and I&rsquo;m very happy. As much as we love our vacations to see family, it was becoming clear that Sabina and I were overdue for a 100-percent carefree, zero responsibility trip together. With all of this in mind and our 20<sup>th</sup><span class="Apple-converted-space">&nbsp;</span>wedding anniversary approaching, I knew I had to do something special for her. I had to create the perfect gift to symbolize my love for her and celebrate our life together.</p>

She had dreamed of doing this long before I met her. Over the years, Paris kept coming up. &ldquo;Maybe next year,&rdquo; was our refrain. We never had the opportunity to go. So Paris would be my gift to her.</p>

I enlisted Sabina&rsquo;s parents, who live in Cleveland, to come to Florida to watch our boys, Luca, then 14, and Marco, 11. My story was that she should join me on a training session in Amsterdam, itself a treat, but not Paris.</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">We boarded a flight from Miami to Paris under the guise that we were continuing on to Amsterdam.&nbsp;It wasn&rsquo;t until we went to collect our luggage that I handed her a Fodor&rsquo;s guide to Paris, her go-to book whenever the family joined me on board, and told her, &ldquo;Happy Anniversary!&rdquo;&nbsp; Knowing my sense of humor, she thought I was joking. But once she realized we were finally going to Paris, she was overjoyed.</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">We grabbed our bags and went off to discover the dazzling City of Lights.</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">First stop was our home for the next four nights, the Hotel Saint-Jacques in the Latin Quarter, which I had secretly booked online.&nbsp; It was the perfect place for Sabina because the Hotel Saint-Jacques is where her favorite movie, the Audrey Hepburn/Cary Grant classic &lsquo;Charade&rsquo;, was filmed. The hotel was charming and a piece of art itself with rooms painted in warm colors and beautiful paintings on the wall.</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">We headed out immediately toward Notre Dame, which was close to our hotel. This beautiful Gothic cathedral was a site we ended up visiting many times during our trip. We saw it that first morning, with pale, February light streaming through the magnificent stained-glass rose window, a gleaming contrast to the gray, stone walls. As Notre Dame was on the way to the hotel, we returned each evening, after busy days exploring, to pass by its watchful gargoyles, perched along the walls.</p>

Like our visits to Notre Dame, we quickly formed another routine of a Nutella crepe before returning to the hotel. Delicious!</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">Sabina discovered that the Louvre was open until 10 p.m. that first evening, so we headed there at 6 p.m. and found the museum mostly empty. How wonderful it was to walk through its rooms together, seeing the priceless works inside.</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">For Sabina, seeing paintings by the artists she had studied for so many years was a lifetime dream. For me, the most memorable painting was the Mona Lisa. To gaze upon her, without the throng of people that ring her during the day, and feel as if she was gazing back only at us, was really special. It was a very quiet, serene moment. I&rsquo;m not typcially into paintings but once you go there, it changes your mind. The Louvre is a special place.</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">We packed a lot into our short time in Paris. We saw the churches of Saint Sulpice and Sacre Coeur. We worked our way through the department store Galeries Lafayette. We stood atop the Eiffel Tower and surveyed the city. From that high point, we spotted our next destination, the golden-domed tomb of Napoleon and the Musee de L&rsquo;Armee.</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">Strolling through this magnificent museum, we admired the armor and diverse range of weaponry through the ages. We found ourselves thinking of our sons because they both enjoy medieval history and the Age of Empires computer games. They would love this museum. It&rsquo;s truly a museum for guys!</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">More typically, we soaked up the atmosphere through long walks, along the grand Champs Elysee, the historic Marais district, the Jardins de Luxembourg and the ancient rue Mouffetard, a narrow cobblestone street that was once a Roman road that led all the way to Italy. Sabina mostly set the itinerary and I advised on where to dine. You know you are on vacation when choosing a restaurant is the most important decision of the day! We enjoyed a classic French dinner of Boeuf Bourguignon at the renowned bistro Chez Rene and couscous at Chez Omar.</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">But the meal I recall the most reminded me of one I had long ago. I must stop here and admit, this was not my first trip to Paris. I went decades ago, a few years before I met Sabina. That visit also represented a very rare break from responsibility.</p>
<p style="PADDING-BOTTOM: 10px; MARGIN: 0px; PADDING-LEFT: 0px; PADDING-RIGHT: 0px; PADDING-TOP: 0px">I was a young safety officer at the time, appointed by Sitmar Cruises to the building team of the Fairsky (later the Sky Princess), which was being built in a shipyard near Toulon. When a strike broke out, I found myself with nothing to do, so I took a train to Paris. &nbsp;I stayed in a small hotel, and most of my meals were picnics of fresh, French bread, pate, cheese and wine. Is there a more beautiful lunch or dinner?</p>

One night, we put Fodor&rsquo;s recommendations aside, and recreated one of those meals. We bought baguettes, three or four different types of pate, some salami and an assortment of cheese. Of course, we also picked up a great bottle of wine.</p>

As the night was not too cold, we opened the doors to the balcony and let the breeze in. We looked out over the city, as we sat on our bed trying different pates and sipping wine. I cannot think of a more romantic setting.</p>

Two years have passed by since then, but I still treasure our getaway together. I think it would be difficult for me to surprise her again, so I think we will plan that one together. I know if Sabina has her choice, we will go to Paris again.</p>

One of the main attractions in Paris by far is, the Louvre Museum. <br /><br />The museum was built by Philippe-Auguste in the late 12th century, and began as a fortress on the edge of the city to protect Paris from Anglo-Norman invaders. It is home to 35,000 works of art drawn from eight departments, displayed in over 60,000 square meters of exhibition space. That's about 25 centuries of creative achievement and approximately 8 centuries worth of architectural history. It is home to the portrait of Mona Lisa by Leonardo Da Vinci as well as Greek, Roman, Egyptian, and near Eastern antiquities. There are rooms that opened in 1824 that are solely devoted to "modern" sculpture, which gradually became the Department of Medieval, Renaissance, and Modern Sculpture in the museum.<br /><br />The hours of operation for the museum are 9 a.m. to 6 p.m. every day except Tuesday and Holidays. &nbsp;The museum is open until 10 p.m. on Wednesday and Friday evenings.<br /><br />Admission to the Louvre is free on the first Sunday of every month. However, we suggest you avoid it, as the lines can run around the building. The museum does not have enough staff to keep the entire museum open every day. Barring unforeseen circumstances (works, transport strikes, etc.), a yearly calendar lists which rooms are open and closed for each day of the week. The admission for the museum varies, according to the time and part of the museum you would like to visit.<br /><br />You could spend days looking at the marvelous works of art, but unless you have been to Paris before, I recommend the ninety minute tour that is offered several times per day that takes you through all the major works of art.</font></span></p>

      <description><![CDATA[<p>If you have several days in Paris, we suggest you take time to visit the Palace of Versailles. A visit to the Palace at Versailles is a glimpse of the rich and opulent world of Marie Antoinette and King Louis XVI.</p>
<p>There are several day tours you can book from Paris that include transportation and admission. If you prefer to do things on your own, you can take the RER (Reseau Express Regional) train from downtown Paris to Versailles and arrive in about 40 minutes. The train station is approximately a five minute walk from the Palace.</p>
<p>The beautiful Palace and Gardens of Versailles are famous as a symbol of the system of absolute monarchy in France. It was the official residence of the kings and queens from 1682 until 1790. Versailles has one of the largest formal gardens ever created, with fountains, extensive flower gardens and canals. It was designed by Andre Le Notre.</p>
<p>Visit the Museum of History of France to enjoy paintings and sculptures. While touring the inside of the Palace, make sure to see the Hall of Mirrors, which is a ballroom more than 230 feet long ballroom lined with 17 large mirrors. Many historical events took place in this room including the crowning of Kaiser Wilhelm I, and the signing of the Versailles Treaty that formed the League of Nations and ended World War I.</p>
<p>Spend time strolling through the gardens. You can also rent a row boat in mile long lake, called the Grand Canal. You can also walk in the nearby woods to visit the Grand Trianon which was home to Louis XV's favorite mistress, Madame de Maintenon, and the Petit Trianon which means home away from home for Queen Marie Antoinette the wife of Louis XVI. It is said that she would go here when she wanted to get away from royal treatment and formalities, and just be herself. Nearby you can visit the Queen's Hamlet, which was intended to be a play village where the Queen could see how it would feel to live as a peasant. This area offered cottages, a lake and watermill for her amusement. Can you imagine? Oh yes, and if the Palace and all these areas weren't enough, on the grounds there is a Royal Chapel, Royal Stables and an opera house, which is one of the largest in Europe still today.</p>
<p>If you visit the Palace in the summer months, make sure and enjoy the fountains. When on, the fountains are accompanied by classical music, and the water is synchronized with the tempo.</p>

<p><font size="2" face="verdana, arial, helvetica, sans-serif"><strong>In the beginning</strong><br />In a city as vast and varied as Paris, you might as well start where it all began: Ile de la Cite and Ile de St-Louis, the island birthplaces of Paris where you&rsquo;ll find the Notre Dame. Wander further and you&rsquo;ll find Sainte-Chappelle Cathedral, built in the 13th century to house Louis IX&rsquo;s impressive collection of religious relics; and La Conciergerie, now the seat of Paris&rsquo; judiciary, but once its most dreaded prison.&nbsp; In contrast, Ile de St-Louis is a residential area where the oldest house was built in 1660. This stomping ground of Marie Curie and Camille Claudel is so architecturally congruous, it feels as though you&rsquo;re ambling through another era.<span class="Apple-converted-space">&nbsp;</span><br /><br /><strong>Coffee break!</strong><br />Paris and caf&eacute;s go hand-in-hand, and Montparnasse is the city&rsquo;s hub of caf&eacute; culture. Here, you can rest your feet at legendary hangouts like Dome, Coupole and Rotonde, where everyone from Picasso, Modigliani and Man Ray to Fitzgerald, Faulkner and Trotsky came to brood over steaming cups of French Roast.<span class="Apple-converted-space">&nbsp;</span><br /><br /><strong>Hustle &amp; Bustle, Parisian-style</strong><br />Paris is known for its leisurely pace&mdash;white-knuckle car traffic aside. But it&rsquo;s also one of the most important business centers in the world, and nowhere is this more obvious than La Bourse, in Paris&rsquo; 2nd arrondissement and home to the Paris stock exchange. At lunchtime, La Bourse becomes one of the city&rsquo;s most energetic sections as the titans of Gallic capitalism pour their frenetic energy into the quarter&rsquo;s restaurants. Wander next door, and the neighborhood&rsquo;s Le Sentier district provides a perfect place to spend all those Euros: the wholesale outlets of the Paris garment trade, where buyers both amateur and professional come from all over Europe to haggle for the best deals on Parisian fashion.<span class="Apple-converted-space">&nbsp;</span><br /><br /><strong>The Comeback Kid</strong><br />The royal court&rsquo;s departure from Le Marais to the more bucolic Versailles in the 1600s led to a decline that would intensify centuries later with the arrival of the Nazis. But the end of the War would bring change, and by the 1980s, the young, artistic and individualistic began to claim Le Marais as their own. Today, Le Marais is one of Paris&rsquo; most desirable and off-beat neighborhoods. While retaining its history as the city&rsquo;s Jewish center, it has become popular for its cafes, galleries and shops, which, due to Parisian practices, often retain their original facades after being sold, resulting in shoe boutiques with bakery fronts and groceries masquerading as bookstores. Its original anchor, the exquisite Place des Vosges, makes Le Marais the city&rsquo;s oldest square still containing its original buildings.<span class="Apple-converted-space">&nbsp;</span><br /><br /><strong>La Grande Arche de La Defense</strong><br />Anchoring Paris&rsquo; glittering high-rises is the sleek, perfectly cubic Grande Arche. Before long the area transformed into a thriving and colorful enclave, and today it is the largest Chinatown in Europe and home to over 150 Asian restaurants. The long-standing immigrant neighborhood of Belleville, birthplace of Edith Piaf and Maurice Chevalier, became another hotspot for Asian immigrants in the 1980s. Today, Belleville&rsquo;s Chinese quarter is part of the neighborhood&rsquo;s ethnic patchwork, along with vibrant Arab, African, Jewish and Armenian populations.<span class="Apple-converted-space">&nbsp;</span><br /><br /><strong>Halls of Knowledge</strong><br />As everyone knows, Paris is home to arguably the most famous museum in the world. But standing in the Louvre&rsquo;s impressive shadow are scores of smaller museums within strolling distance of each other. Amble down the Rue Antoine Bourdelle to the Musee Bourdelle, filled with its namesake&rsquo;s grandiose sculpture. Around the corner is the tiny Musee du Montparnasse, detailing the enclave&rsquo;s Roaring-20s heyday with photos taken by luminaries like Robert Doisneau and Henri Cartier-Bresson. From the moment we settled into our stateroom, we began to feel less like tourists and more like extremely fortunate residents of the City of Light. When the ship was in port, we strolled on and off as if we had our own <em>pied &agrave; terre</em>; when the ship was underway, we had more fascinating views than we could possibly enjoy from a taxi. And the service…no detail was overlooked.</p>

<p>That first full day in Paris, we re-discovered old friends &ndash; Notre Dame Cathedral, the jewel-like Sainte Chapelle, the Mus&eacute;e de la Conciergerie &ndash; and, Gerry&rsquo;s passion, the wonderful bridges of Paris.</p>
<p>Following the meandering loops of the Seine approximately northwest, our next stop was the village of Les Andelys. All the way, we had seen signs of Christmas &ndash; lights and decorations and other river boats decked out in holiday cheer. After the cosmopolitan hubbub of Paris, Les Andelys seemed to transport us to another age and culture. Gerry read me passages from <em>Ivanhoe</em> as we explored the fascinating fortress and castle of Richard the Lionheart. Narrow streets and half-timbered houses invite strolling in this green river-side town.</p>

<p>Then it was on to Rouen, an exquisitely preserved medieval city, where the highlights of our stay were a holiday choir recital in the gothic magnificence of Rouen Cathedral and, not to be missed, the <em>March&eacute; de N&ouml;el,</em> Christmas Market, in the <em>Place de la Cathedrale.</em> Beneath a galaxy of twinkling lights, stalls offer an array of trinkets, handmade goods and signature edibles, such as roasted chestnuts, cr&ecirc;pes and the spiced wine known as vin chaud. Returning to the ship carrying bags of treasures, Gerry felt like <em>P&egrave;re No&euml;l</em> himself!</p>
<p>On our return journey, we disembarked at Conflans Sainte Honorine to tour the incomparable Palace of Versailles, with its Hall of Mirrors and wall-to-wall opulence. Finally we returned to Paris, feeling enriched and fulfilled, calmed by our stately progression up- and down-river and excited to share the city&rsquo;s dazzling display of holiday lights and to open presents with Julia, Paul and 3-year-old Cammy, whose welcoming &ldquo;Joyeux No&euml;l, grand-maman!&rdquo; was truly a grandmother&rsquo;s delight.</p>
